My chocolate and pears cake

image

It’s nearly Easter and there is a queue of chocolate eggs on my doorstep waiting to get in ARGH!! I was trying to be good this year by staying away from chocolate but it’s not happening so today I wanted to get rid of some from my fridge and I made this simple and quick cake, I hope you will like it.

What you need:
1 cup of plain flour
1/2 cup of sugar
2 eggs
3 tablespoons of butter or margerine
1 sachet of vanilla-flavoured baking powder
1 pinch of salt
2 pears
Half medium size Easter egg
2 tablespoons of butter or margerine

How to do it:
In a bowl mix eggs, sugar, softned butter and a pinch of salt, mix well. Add the flour and the baking powder and mix again.
Cover a baking pan with baking paper and place the mixture with help of a spoon. Peel and slice the pears and place them on the cake.
In a little bowl place the broken chocolate and the butter and put it in the microwave until it melts,if it’s too thick add a tablespoon of water.
Place the melted chocolate on the cake and bake for about 30 minutes at 180°C.

My tuna and veggies pie

image Have you ever thought about turning a salad into something else? The ingredients used here are the same I use in summer for a tasty salad but this time I have put it into puffy pastry and baked it. As it’s loaded with garlic I wouldn’t recommend it for a dinner date but me and my husband have been married for nearly 5 years so I guess we are allowed! LOL

What you need:

2 round puffy pastry sheets

3 ripe tomatoes

Half cup of steamed corn

Half cup of pitted black olives

Half cup of canned tuna

Half cup of diced cheese (I have used Emmenthal but Cheddar is also fine, you can also use more then half a cup for a richer taste)

4 cloves of garlic

Grounded black pepper

Dry oregano

Salt

How to do it:

Place a puffy pastry sheet on a baking tray, in a bowl mix tuna, black olives, corn, diced cheese, the tomatoes chopped and the crushed garlic, season with salt, oregano and black pepper. Mix with a spoon and place everything in the puffy pastry and cover with another sheet. Fold the edges and make a nice pie. Bake in a hot oven (180°C) for 40 minutes, let it cool.
